What is Banaras Tirangi burfi ?

Baranas Tirangi Burfi is a traditional historic Tri-color Indian sweet from the spiritual city of Varanasi (Popularly known as Kashi or Banaras) Uttar Pradesh. This tri-color burfi was created by  sh. Madan Gopal Gupta of Ram Bhandar sweets, Thatheri Bazar, Varanshi in the year around 1942 to symbolizes the India’s freedom struggle movement to inculcate patriotism among locals & send secret message of unity among people to fight against British Rule.  This Tirangi Burfi becomes a symbol of asking people to join the Quit India Movement where Mahatama Gandhi gave slogan as “either do or die”.

                                                                 The Tirangi burfi is called “Rastriya Burfi” because it has tri-color symbolizing our Indian flag. It is made by using three different nuts & khoya such as Almond, cashewnuts & pistachio . The upper layer was made of ground almond fried in desi ghee and colored with saffron to achieve the kesariya color, the center is made of cashewnuts and the bottom layer is made of pistachio nuts to give green color. Recently, in the year 2024, Govt of India granted Geographical Tag to Varanasi Tirangi Burfi. It is highly popular during Republic day & Independence day celebration as a symbol of patriotism.

Characteristic of Banaras Triangi burfi:-

The main characteristic of this unique Triangi burfi is its khoya or mawa which is made from full fat buffalo milk (minimum 5.5% fat) because it yields whiter product with soft, lose body & smooth granular texture in the mawa. It is prepared using three different nuts & khoya such as Almond, cashewnuts & pistachio . The upper layer was made of ground almond fried in desi ghee and colored with saffron to achieve the kesariya color, the Centre is made of cashewnuts to give white color and the bottom layer is made of pistachio nuts to give green color.

  • Inspired from Indian flat, this tri-color burfi was created using natural ingredients rather than using artificial color. Saffron or kesar is used to give the kesaria color, plain khoya & cashewnuts for white color & pistachio nuts for green color.
  •  All 3 layers is carefully placed each other or assembles so that they remains separate and maintain their own color & flavor. It has soft and smooth texture that can melt in the mouth.
  • On the 75th anniversary of India’s independence from British rule, Govt of India in the year April 2024 granted Geographical Tag to Banaras Tiranga Burfi. 

Brief history of Banaras Tirangi Burfi:-

According to the Geographical Indication registry website, the history of Banaras Tirangi Burfi or popularly known as Rashtriya Barfi is not very old, it has roots with the India’s Independence movement during British rule.  During the Quit India Movement 1942,  Britishers has banned displaying the tri-color flags & sensors news to curb the Quit India Movement. 

  • An Idea came to Sh Madan Gopal Gupta who runs the Ram Bhandar Sweets in the Thatheri Bazar, old city of Banaras to create a Tri-color sweet symbolizing the Tiranga.  Then, Tirangi Burfi was created by  sh. Madan Gopal Gupta of Ram Bhandar sweets in the year around 1942 to symbolizes the India’s freedom struggle movement to inculcate patriotism among locals & send secret message of unity among people to fight against British Rule.  This Tirangi Burfi becomes a symbol of asking people to join the Quit India Movement where Mahatama Gandhi gave slogan as “either do or die”.
  • He also named many of his Mithai items on the name of freedom fighters such as :-Gandhi Gaurav,  Moti-pag , Jawahar Ladoo, Madan mohan 
  • To promote patriotism and nationalism without directly defying the ban, this tri-color burfi was crafted to symbolize the Indian flag. This Banaras tirangi Burfi played a small role but revolutionizing role in India Independence.
  • The Tirangi burfi is called “Rastriya Burfi” because it has tri-color symbolizing our Indian flag.  It is highly popular during Republic day & Independence day celebration as a symbol of patriotism.

Geographical Indication Tag to Banaras Tirangi Burfi

Government of India has granted the GI Tag to Banaras Tirangi Burfi on 16th April 2024. It has been registered in the name of Mahanagar Udyog Vyapar samiti, piplani katara, kabir choura, Dist varanasi, UP and facilitated by NABARD, & Dept of Dairy & food , Govt of Uttar pradesh in the class 29 , Milk product. The GI Tag number of Banaras Tirangi Burfi is 941.

The geographical area of production of Banaras Tirangi Burfi lies within Vanaras district of Uttar pradesh
